RECIPES AND TIPS

Dried tomatoes are cut in half, sometimes deseeded (not in the case of our products), sprinkled with salt, and left to dry for a whole day in the sun (but not in direct sunlight).

WHAT IS THE PROCEDURE TO DRY TOMATOES??

🌍 ORIGIN

Italy, and specifically the magnificent region of Puglia.

 

🍽️ PORTION

The standard portion per person depends on how you intend to use them. We recommend about 50 grams of dried tomatoes per person. The portion is smaller than that of fresh tomatoes, as the flavor is richer and more intense.

 

🧼 SOAKING IN WATER

Dried tomatoes should be soaked in water for 20–30 minutes to remove the salt used for their preservation. We also recommend waiting before adding extra salt, as some of it remains in the product.
Anyone who wants to preserve the texture of dried tomatoes should reduce the soaking time, but rinse them thoroughly under running water.

 

⏱️ COOKING

We recommend chopping them and adding them to a pan where some oil (or butter) and onion have already been sautéed, as onion tends to be less overpowering in flavor than garlic. Cooking time: 10–15 minutes.

 

🧊 STORAGE TO MAINTAIN PROPER TEXTURE

Dried tomatoes should be stored in a cool, dry place away from sunlight. Sunlight can cause oxidation, which darkens them and makes them less appealing. If preferred, they can also be stored in the fridge or freezer.

 

❄️ HOW TO FREEZE THEM

Yes, it is possible to freeze them after soaking them in water (to remove the naturally present salt). Make sure to dry them thoroughly and freeze them on a flat surface so they stay laid out and well separated.

HOW TO USE THEM

Our customers not only use them for sauces, dressings, and pestos, but often also preserve them in olive oil. They can also be used for bruschetta, added to salads, or paired with legumes and grains. They're often used to enrich doughs for bread, pizza, savory pies, etc.

Absolutely! Sun-dried tomatoes will make your pesto deliciously rich. It’s a quick and tasty sauce for your favorite pasta dishes.

 

CAN TOMATOES BE PRESERVED IN OIL?

Yes, they can, but we recommend carefully following a trusted recipe (easily found online or your grandma’s recipe). Be very meticulous with each step to avoid the risk of botulism.
