Do you sell all marketable species even frozen??

No, there are some species that are mathematically not possible to market in this form because in reality there is no real demand for them on the market. The use of dried mushrooms is preferred.

🍽️ THE PORTION

The standard portion per person is the same as for the fresh product; the only significant difference is that frozen mushrooms are already cleaned. So, if you buy one kilogram, it will be one actual kilogram of product without any waste.

 

💧 RINSING BEFORE USE

We always recommend giving a quick rinse to frozen mushrooms to remove any ice residues. Once quickly rinsed under cold water, they can be broken into pieces and cooked as desired.

 

DO NOT DEFROST – IT IS ESSENTIAL

Frozen mushrooms should never be defrosted. If they are, they will lose texture and nutritional value and, by dispersing, will not provide the correct portions you should get with the quantity purchased.

 

⏱️ COOKING

The cooking time is the same as for fresh mushrooms of the same type. So for porcini mushrooms, 15/20 minutes; chanterelles, 40/45 minutes; and black trumpets, 20 minutes.

 

🧊 STORAGE

Frozen products, if your freezer works properly, will remain unchanged for one year from the production date. The date is always indicated on the package.

 

 

🧩 SLICED OR WHOLE

Our customers definitely prefer sliced mushrooms. These are already cleaned and cut, making them very easy to use because they are ready to be tossed into the pot (after rinsing as indicated above).

 

RAW CHANTERELLES

As mentioned earlier, chanterelle mushrooms must be cooked halfway before being frozen at home. On the market, mainly available for restaurants, there are also frozen raw chanterelles, because a careful procedure is followed to freeze them dry so they do not become bitter.

 

🐌 SHELLLESS SNAILS

Snails must be thawed before use, rinsed under water to ensure no shell residues remain, and then cooked as desired, keeping in mind that they are already purged and cleaned.

👨‍🍳 WHY FREEZE MUSHROOMS HALFWAY COOKED AT HOME

If you decide to freeze mushrooms at home, whether bought or gathered, keep in mind that our freezer is designed to maintain already frozen products. However, when freezing fresh food, since other items are present, it may not guarantee a quick freezing process. In fact, fresh mushrooms spoil faster than those cooked or partially cooked, and the same applies to mushrooms.
